Ingredients
- 1 x tin of No1 Mackerel in Natural Oil
- 1 x onion
- 3 Tbs of grated ginger or finely chopped ginger
- 5 x cloves of garlic
- 1 x stock cube
- 3 Tbs of curry powder
- 1 x cup coconut cream
Method
- Cut up your aromatics, onion, garlic, and ginger and fry in oil
- Add the curry powder into the aromatics until a paste is formed
- Pour in your mackerel and add a stock cube
- Pour in a cup of coconut cream and simmer for five minutes
- Serve with plain or coconut rice
